
Raise the bar on this iconic American dish by “frying” it on the grill!
INGREDIENTS:
1 – 2 whole chickens, pieced
Buttermilk Mixture: 1 c buttermilk, 2 Tbsp hot sauce, 1 Tbsp salt, 1 large egg
Breading Mixture: 1.25 c flour, 1/4 c cornstarch, 2 tsp salt, 1 tsp pepper, 1 tsp poultry seasoning
1/4 c. canola oil
DIRECTIONS:
Whip up the buttermilk mixture. Add the chicken pieces and soak in a bowl overnight in the refrigerator.
Combine the breading mixture and dredge the chicken pieces with a good coating of the breading. Let sit 30 min at room temp while heating grill to 425°F.
Prepare indirect grilling by turning off half the burners. Oil the cooking grate. Place chicken on unlit side and close lid for 30- 40 minutes to begin the cooking process.
Coat partially cooked chicken with oil using a brush, then cook for about 10 minutes longer or until chicken is golden brown and reaches a temperature of 165°F.
Serve with your favorite dipping sauces.
